CAROLINA SELECT

Red Carolina SELECT is of medium strong garnet red colour. It has an elegant smell, is matured and has a distinctive smell of ripe black currant. In the mouth the wine is dry, tasty, with fine ripe tannins. The taste is complex, strong, creamy, with nice sweet tannins, which shows a long life expectancy. A very complex wine with a long after taste and a long life.

Varieties: Merlot 92%, Cabarnet Sauvignon 8%

Geographical origin: The winegrowing district of Goriška brda is characterised by a hilly reflief and a mild sub-Mediterranean climate.

Type of soil: Marl and sandstone.

Vineyards: In the heart of terraced vineyards named Južno there is the oldest parts of the vineyards, over 70 years old. The growth and fertility in this vineyard is slow, which enables late harvesting.

Alcohol content: 13.5%

Total acid: 4.9 g/L

Harvesting: Manual picking of grapes in the first half of October.

Vinification: The grapes are macerated for a month. The wine matures for 24 moths in 225L barrels at a constant temperature and humidity. We use 25% of Slavonian oak, 65% of French Allier and 10% of French Troncaise oak.

What does it mean timelessness and what is the outreach of unlimited? Those are the two basic concepts of our wine !

Why is the Carolina select timelessness wine ? Over the years of experience in wine business i realized, that fifth dimensions in wine can only be reached from the homeland  where the wine tree is growing. Microclimate, especially parental substrate which is in our case silicate flysh or so called “Opoka” adds the final touch and special component to Carolina select. How it all works? The wine tree roots have the opportunity to grow through tiny little space in “Opoka” and develop deep and abundant rooting system which in return absorbs water from the deep sediment of the soil enriched by optimum mineral level. 

It is absolutely sure that the second most important condition is microclimate. Wine yards are positioned in terraces system which due to relatively high inclination gives the opportunity of optimal sun exposure yet despite the hot summers the terrene position in terraces grapes reach optimal ripeness usually in first half of October.It is my believe this last finish of grape readiness is very critical since the prolonged vegetation offer relaxed grape ripeness and longer exposure with mineralized water gives the last dots’ on I to this timeless wine. 

To achieve this diamond in wine is only possible in this particular land place where our 80 years old Merlot wine yard can be found !
